Mercimekli Kofte is a tasty turkish appetizer made with red lentils and bulgur. Mercimek Köftesi is a popular finger food, often served with lettuce leaves, lemon juice or pomegranate molasses.
For this simple and delicious recipe, red lentils are first boiled in water until very soft. The lentil mash is then refined with a tomato sauce, spring onions, herbs and spices and shaped into either balls or patties.
Since lentils can burn very quickly, you should keep an eye on the cooking process. You can also cook the lentils in the microwave until soft.
Depending on how soft you want your kofta to be, you can use a few more tablespoons of water if necessary.

‍ Ingredients for about 45 Mercimekli Kofte:

1 cup (220 g) red lentils
2 cups (500 ml) water + maybe a little more
1 cup (165 g) bulgur (fine)
1 onion
1 clove of garlic
5 tbsp (75 ml) oil
2 tbsp tomato paste
2 tbsp pepper paste (alternatively: tomato paste)
1 2 tsp salt
Pepper
1 tsp paprika powder
1 tsp baharat (Lebanese 7 spice mix)
2 tbsp pomegranate molasses
2 spring onions
½ bunch of parsley
