Breakfast Burritos

6 burrito size flour tortillas
2T butter
1/2 chopped red or green pepper
10 eggs
splash milk
salt and pepper
your choice of protein (ham/bacon/sausage)
1 cup cheese sauce (optional)
shredded cheese
salsa

Saute peppers in butter over medium heat until soft. Whisk eggs with milk, salt and pepper, add to peppers and scramble. Remove to plate. Cook protein in skillet, add back eggs and cheese sauce. Wrap egg filling in burrito shells adding shredded cheese and salsa if desired. Wrap in wax paper and store in refrigerator. Freeze if not using within 57 days.
