The trick to nailing the citrusy flavors is poaching the sliced lemons in simmering water before layering them into the cake batter, removing all of the bitterness and leaving only sweetness. Drizzle a glaze—made from sifted confectioner sugar and more Meyer lemons—over the cake before enjoying a slice with a warm cup of coffee. Your morning just got a whole lot sweeter.
