3.25 teaspoons (8g) instant yeast
120g cup warm water
465g whole milk
50g unsalted butter, melted and slightly cooled
110g granulated sugar
1050g allpurpose flour
2 whole eggs
2 teaspoons fine sea salt
1/8th teaspoon diastatic malt powder
melted butter for brushing
Smoked flakey salt

Charred Cinnamon Honey Butter:
3 cinnamon sticks, lightly charred, broken into little pieces by pounding
1/4 teaspoon fresh grated nutmeg
1/8 teaspoon very finely ground black pepper
1/4 cup powdered sugar
3/4 cup salted butter, softened
1 tablespoon wildflower honey
1 tablespoon buckwheat honey
1 vanilla bean, scraped of beans
1/4 teaspoon fine sea salt
