❤ "Lima Bean Mushroom Rice" Ingredients (Serves 6)
Main Ingredients:
3 cups white rice (180cc rice cup)
3 cups water (filled to 0.8 10 mark)
100g lima beans (about 20 lima beans)
300g pork (shoulder meat)
250g king oyster mushrooms (2 pieces)
10 dried shiitake mushrooms
20g ginger

Seasonings:
3 tablespoons sesame oil
1 tablespoon rice wine
4.5 * ¼ teaspoons salt (4.5g)
1 * ¼ teaspoon MSG (optional)

Main Tools:
Stainless steel Chinese wok (essential)
Rice cooker (essential)
Electric cooker (optional)

❤ Directions:
1. 01:37 Prepare Ingredients:
Cut pork into bitesized pieces and blanch. Set aside.
Slice ginger and tear shiitake mushrooms into strips.

2. 02:43 Stirfry Ingredients and Seasoning:
Heat sesame oil in the wok, stirfry ginger until softened, then add pork and shiitake mushrooms. Stirfry for about 5 minutes, add 2 * ¼ teaspoons of salt.
Add shiitake mushroom soaking water or drinking water to the wok, using a ratio of "rice to water = 1 to 0.8~0.9" recommended value, and add 2 * ¼ teaspoons of salt.
Once the water boils, reduce heat and simmer covered for about 7 minutes. Adjust saltiness according to taste (add ⅛ teaspoon of salt in the video).
While simmering, wash rice and drain thoroughly to control water content. After draining, place the rice in the inner pot of the rice cooker.

3. 05:38 Cook Rice and Ingredients in Rice Cooker:
Add all ingredients from step 2 into the inner pot of the rice cooker, mix well, taste and adjust saltiness, then layer lima beans on top.
Select brown rice mode and cook for 70 minutes.
Remove lima beans after cooking, then use a rice spatula to fluff and mix the rice and ingredients to fully incorporate the flavors.
Transfer rice to a large plate and place lima beans on top.

4. If the rice is too firm, transfer the rice and ingredients from the rice cooker to the inner pot of an electric cooker. While flipping the rice, sprinkle water and add 90cc of water to the outer pot of the electric cooker, then steam to soften the rice.
