Hi everyone!
Thanks for tuning in again just giving you a glimpse of our lifeeeee here in Melbourne. Turning this into a little bit of a series too so I hope you enjoy!!


Slow roast beef curry recipe:

1 x large chuck steak
1 x onion, chopped
Paprika
Mild curry powder
2 tbsp massaman curry paste
2 tbsp oyster sauce
1 can light coconut milk

In a pan over medium heat fry up the onion, paprika and curry powder with a little bit of oil until the onion turns slightly translucent

Place the chuck steak in the pan and cook for about 2 min on each side until seared
Salt on both sides as well

Cover with water until the steak is almost fully submerged, cover with a lid and cook on low heat for a minimum of 2 hours
You can also put it in the oven at this point too at 130°c
(I cooked mine for 3 hours on the stove)

Take out the steak and shred with 2 forks
Add back into pan

Add the massaman curry paste and the oyster sauce and stir until dissolved towards the end of the cook

Add the sweet potato whenever but just make sure it’s only cooked for 30 minutes

Add 1/2 can coconut milk (I saved the other half for the rice)

Add spinach and cook for about 23 minutes until spinach is silted

Serve with coconut rice and enjoy!
