Let’s Make My Husband’s Birthday Dinner

For my husband’s birthday, I made this dinner inspired my a meal he ordered on our Valentine’s Day dinner. It was so good I literally ditched my plate to share his! This was very worth the effort.

Ingredients for Garlic Confit
4 garlic bulbs, peeled
1 teaspoon black peppercorns
1 dried chili
About 6 small sprigs of thyme
1 cup olive oil
Cook in oven at 370°F for 3540 minutes


Ingredients for mashed potatoes
4 large Russet potatoes
5 tablespoons salted butter (Kerrygold is my all time favorite brand)
3/4 cup 2% milk
¼ cup sour cream
6 cloves of garlic from confit
Salt and pepper to taste

Pan Fried Grouper ingredients
2 pieces grouper fish, approximately 2 lb each, fileted
2 teaspoons onion powder
1 teaspoon garlic powder
½ teaspoon old bay seasoning
1 teaspoon paprika
½ black pepper
1 teaspoon of salt

Butter shrimp ingredients
1.5 lb shrimp, peeled and deveined
2 teaspoons onion powder
1 teaspoon garlic powder
½ teaspoon old bay seasoning
½ teaspoon paprika
Dash of black pepper
2 tablespoons avocado oil for marinating and and extra tablespoon for coating pan
3 tablespoons butter
salt to taste

Green beans with Almond ingredients
2 lb green beans
½ teaspoon baking soda (oil beans with this for vibrant green results)
2 teaspoon avocado oil
4 cloves of garlic, minced
½ cup slivered almonds
½ teaspoon black pepper
Salt to taste

White sauce Ingredients:
1 cup white wine
1 cup heavy cream
2 tablespoons cold butter
2 tablespoons freshly squeezed lemon juice
1 garlic clove from confit
Salt and pepper to taste
