蒸藕夹
所需食材
莲藕 200克
瘦肉末 100克
水发香菇 25克
香葱 1根
蛋清 1个
调料 生抽料酒蚝油盐鸡粉 玉米淀粉

1. 首先将莲藕洗净去皮
2. 莲藕切片放入冷水中浸泡备用
3. 将香菇切碎
4. 碗中放入瘦肉末香菇碎然后加入料酒生抽蛋清蚝油盐鸡粉搅拌均匀待用
5. 浸泡好的藕片取出沥干水分
6. 取一小盘倒入适量玉米淀粉
7. 取一大盘像这样拿一个藕片沾上淀粉放在盘中然后用小勺放上调好的肉末
8. 再取另外一片藕片沾上淀粉放在已经有肉末的藕片上面用力捏一下夹紧这样一个莲藕夹就做好了
9. 用以上的方法把剩下的藕片和肉末都这样夹起来
10. 准备蒸锅水开后放入莲藕夹盘大水蒸20分钟。
11. 取出蒸好的藕片撒上葱花就好了

200g lotus root
100g ground pork
25g shiitake mushrooms
1 green onion
1 egg white
Seasoning: soy sauce, cooking wine, oyster sauce, salt, chicken powder, corn starch

1.Wash and peel the lotus root
2. Slice lotus root, soak in cold water for later use
3. Finely chop the shiitake mushrooms
4. Put the ground pork and shiitake mushrooms in a bowl, then add cooking wine, light soy sauce, egg white, oyster sauce, salt, chicken powder and stir well, set aside
5. Take out the soaked lotus root slices and drain the water
6. Take a small plate and pour some corn starch
7. Take a large plate, dip a lotus root slice like this with starch, put it on the plate, and then put the prepared ground pork on it with a small spoon
8. Take another slice of lotus root, dip it in starch, put it on top of the slice of lotus root that already has meat, pinch it firmly, and clamp it tightly, then a lotus root clip is ready.
9. Use the above method to clamp the remaining lotus root slices and meat like this,
10. Prepare a steamer, put in the lotus root after the water is boiled, and steam in high water for 20 minutes.
11. Take out the steamed lotus root slices and sprinkle with chopped green onion
