Kuih Kapit/Love Letters

Ingredients:

100g Rice Flour
5 eggs/kampong eggs
1 tablespoon of tapioca flour (12g)
60ml water
150g caster sugar (do not eat sweet, you can reduce about 20g)
200ml Coconut milk

Practice:

1. First, disperse 5 eggs (don't beat them), add 150g of caster sugar and stir
2. Add 100g rice flour, 1 tbsp tapioca flour, 60ml water and 200ml coconut milk, and mix well
3. Strain the stirred batter twice, close the lid, and let rest for 15 minutes
4. The next step is to prepare for baking. Put a steel rack on the stove, coat the Love Letters mold with a layer of oil, turn on a small fire, and heat.
5. Pour the batter into the Love Letter mold, close the mold and bake on the gas stove. When baking, you need to turn the Love Letter mold over to heat both sides evenly.
6. Use the back of a small knife to scrape off the Love Letter crust on the side of the mold. After baking until light brown, take the Love Letter out with a knife and fold it into quarters.
7. Repeat this step until the remaining batter is baked.
8. After the Love Letters is cool, put it in a sealed jar immediately
