Vegan Sundubu Jjigae
(Serves 2)

400g soft tofu
3/4 cup cooked lentils
1/2 yellow onion
34 mushrooms
23 stalks green onion
2 chilli peppers
1/2 zucchini
400 ml water

tablespoon garlic, minced
2 tablespoons rice wine

1 2 tablespoons Korean soybean paste (or soy sauce)

Gimbap

1 cup mixed grains, cooked
1/2 teaspoon Korean soybean paste
1 teaspoon tahini or sesame oil
Toppings: strips of carrot, zucchini, vegan omelette, spinach


Cold Vegan Bibimbap
(Serves 2)

1 package fresh shiitake mushrooms
1 tablespoon Korean soybean paste
1 tablespoon water
1/2 teaspoon garlic powder
1 teaspoon date syrup

Sauce

2 tablespoons gochujang Korean chili paste
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon shiitake mushroom powder
1/2 teaspoon date syrup
1 teaspoon tahini


Toppings

1/2 cucumber or zucchini, shredded
1 carrot, shredded
1/4 daikon radish, shredded
4 sheets roasted korean seaweed
toasted sesame seeds
2 serving mixed grains
