Woodland cuisine is more than just a culinary trend: in some areas of Europe, it is common to serve everything that grows in the forest. For the forest is full of aromas and offers much more than mushrooms and berries. The forest is a huge storehouse of wild plants, leaves, needles, mosses, pine cones, roots, blossoms and much more.
In Kleinwalsertal, for example, you can eat fresh spruce tips in spring spicy or sweet forest blueberry cakes, pasta with beech and birch shoots or haunch of venison with spruce honey. Kleinwalsertal is located in the northwest of Austria, in the province of Vorarlberg. It is a narrow high valley with 5,000 inhabitants that can only be reached by road coming from Germany.
