Valais - Celebrating 'Tschäggättä' carnival with delicious dessert 'Sii' | At our Neighbour's Table

In the Swiss canton of Valais lies the Lötschental with a view of the Bietschhorn, in the midst of forty fourthousandmetre peaks. The valley is a UNESCO World Heritage Site and has preserved its original character, customs and regional specialities. Every year before Ash Wednesday, the Lötschental carnival "Tschäggättä" takes place. Young single men in frightening disguises and carved wooden masks frighten the inhabitants. Mask carving has a centuriesold tradition here and is passed down from generation to generation.

During the cold season, the Lötschentalers like hearty fare with lots of cheese and dried meat. For dessert, there are desserts like "Sii", a recipe of rye bread soaked in wine, dried fruit, schnapps and cream.

Karin Ritler came to the alpine village of Ried from Austria 30 years ago and got to know not only her husband Dani, but also the regional cuisine. Dani grew up in the Lötschental and, like many here, is a farmer and ski instructor. When son Nathanael and his friends visit the Ritlers in the evening hungry for "Tschäggättä", there are always delicious regional dishes like raclette by the fire. Karin combines it with her own ideas, such as sour pickled winter vegetables. And every Sunday, friends and relatives gather at the Ritlers' for the Valais stew "Gsottus". The dish has to be exactly as Nathanael's grandmother has always prepared it. Then the appetite comes with the meal.
