For centuries, cultures around the globe have enjoyed glutenfree flatbreads distinctive to their particular region. Even though wheat and other glutencontaining grains have been around ever since humans started growing food, they weren’t always available or may have been too expensive.

Some traditional glutenfree flatbreads are entirely grainfree, based on legumes or vegetables. Other flatbreads are made from glutenfree grains (e.g., corn and rice) or pseudograins (e.g., buckwheat and teff). So, glutenfree flatbreads are nothing new.

This coconut flour flatbread is glutenfree as well. However, it relies on a critical functional ingredient found in the husk of seeds from Plantago ovata – psyllium.
It’s soft, tender, pliable, and has a slight coconut flavor.
