Jamaican Brown Stew Chicken

Ingredients:
4 leg quarters, skinless, each cut into at least 34 pieces

2 1/2 tbsps Caribbean Chicken Seasoning

2 tsps onion powder

2 tsps garlic powder

black pepper to taste

4 allspice berries crushed

1/4 1/2 tsp salt

1 1/4 tsp Browning

3 tbsps green seasoning    • JAMAICAN GREEN SEASONING || JERENESEA...  

1/4 tsp fresh minced ginger

1 tsp minced garlic

2 3 stalks scallion

fresh thyme

whole scotchbonnet

1 small carrot, chopped

Bell peppers as desired

1 onion, cut in strips

2 3 tbsps ketchup (optional)

1 1/2 tbsp soy sauce (not a traditional additon but used by many of us)

Water for simmering (I add enough to just COVER the chicken or slightly cover it) we dont want to much since that can make the stew soupy. Also you'd end up over cooking the chicken in order to reduce that excess liquid.

TIPS:

1. If gravy not dark enough for you, add a tiny bit of browning while simmering; but, taste before adding more because excess browning can cause bitterness.

2. Use a thick/heavy bottom pot when doing this dish.

3. Before adding the water to the pot, use a little to rinse the seasonings in the bowl that was used for marinating.Get all the flavour in that pot
