Vegetarian Red Curry a delicious 30 minute recipe using pantry and convenience foods! This 30 minute dinner is also Vegan, Dairy and Gluten Free! RECIPE BELOW.

RECIPE: This Recipe is also Vegan, Dairy Free and Gluten Free
Convenient Frozen Vegetables can be used in this recipe!
In your skillet saute 1 Cup of onion and 1.5 Cups sliced multicolored peppers in a tiny bit of oil
Feel free to use other vegetables too! Pea Pods would be good:)
Add cooked butternut squash (I use packaged frozen)
1 can drained rinsed garbanzo beans
You can also add tofu instead of beans. I like to fry drained pressed tofu first before adding. See link below for tofu press link.
Add 1/2 recipe for the SIMMER SAUCE (Watch my previous video to make it) Add more Thai Red Curry if you want and more vegetable broth if it seems to thick. Taste to adjust the flavors.
Serve with rice. Great served with naan bread, cilantro and chopped peanuts!

RED CURRY SIMMER SAUCE
1 Can Coconut Milk
1/2 Cup Vegetable Broth (or Chicken)
2 T. Brown Sugar
2 T. Peanut Butter (I used Adams)
2 T. Red Curry Paste (I used Thai Kitchen)
2 T. Fresh Lime Juice
1.5 T. Quick Cooking Tapioca (I crushed mine in my little coffee grinder)
1/2 T. Minced Fresh Ginger (Use 1 T. if you want more ginger taste)
3 Cloves Minced Garlic
Salt to Taste
