Making caramel with dates is not only healthier but incredibly tasty. In this episode, Pamela demonstrates her favorite date caramel sauce recipe. Recipe below:
Date Caramel Sauce Recipe:
6 dates, pitted and soaked in 1 cup warm water for 30 minutes,
soaking liquid reserved (about ¾ cup packed dates)
3 Tablespoons melted unrefined virgin coconut oil
3 Tablespoons grade A maple syrup
3 Tablespoons brown rice syrup
¼ cup creamy raw almond butter
2 teaspoons lucuma powder (optional)
½ teaspoon pure vanilla extract
¼ teaspoon sea salt – I added another ¼ teaspoon salt
1. Combine all ingredients in a food processor or blender with 2 Tablespoons date soaking liquid and process until completely smooth. Add additional date soaking liquid as needed to achieve desired consistency.
