The discolouration of peeled/sliced potatoes can be stopped by first soaking them in a bowl of cold water mixed with vinegar or lemon juice or a pinch of a crushed vitamin C tablet. They change the pH of the potatoes thereby stopping the oxidization/discolouration process.
