AMOUNTS USED IN THIS VIDEO:
25 lbs. (1/2 bushel) tomatoes
49 oz. canned diced green chiles
11 jalapenos, seeded
5 1/4 cups onion, chopped
11 cloves garlic, minced
3 1/2 cups apple cider vinegar
2 cups cilantro, loosely packed
7 tsp. dried oregano
1 3/4 tsp. cumin
7 tsp. salt
7 Tbsp. sugar
YIELD: 21 pints of salsa

A NOTE ABOUT THE VINEGAR:
I should have covered this in the video but I didn't, so I wanted to mention it here: If you're making fresh salsa then you can omit the sugar and vinegar ingredients. BUT, if you're water bath canning, you should definitely leave them in. The trick to canning shelfstable foods is the acidity. Vinegar makes this salsa safe for water bath canning. The sugar is added to balance the bitterness of the vinegar. Also, be careful when "winging it" with ingredients. Most canning recipes that use tomatoes have very specific amounts of acidic and nonacidic ingredients for a reason. You want to make sure your salsa is safe to consume and that it will stay shelfstable.
