I'm planning an extreme grocery budget challenge where I'll be eating for $20 for the week. I'm planning frugal meals to save money on groceries. I'll be doing some healthy meal prep to save time with my meals. In this Aldi grocery haul I'll be reusing ingredients across meals. This meal plan can be doubled or tripled to feed a family on a budget.

Quinoa Salad
• 1 cup quinoa
• 2 cups water
• 1 ½ cups chickpeas
• 1 persian cucumber – or if using another type remove seeds
• ½ red bell pepper
• 1/2 cup finely chopped flatleaf parsley (from 1 large bunch)
• ¼ cup olive oil
• ¼ lemon squeezed
• 1 tablespoon red wine vinegar, or vinegar of your choice

Cook the quinoa in 2 cups water. Bring to a boil, then cover and simmer for about 15 minutes or until done. Let cool, mix in with chopped vegetables.

Chayote Soup

2 cups water
1/2 Not Chicken bouillon
2 handfuls of spinach
1 chopped carrot
1/2 chopped chayote
1/3 bag of video noodles brown these first in the pan with some oil

MY NEW BREAKFAST OBSESSION

Lightly toast 1/2 bagel, top with small amount of avocado, mash to creaminess texture, top with shredded carrots, and fried egg. Top with small slivers of green onion and chili garlic sauce, or your favorite hot sauce.

Sesame Dressing for Quinoa Bowl

1 tbs low sodium soy sauce
1 tbs sesame sauce
1 tsp of balsamic dressing
1 tsp brown sugar? or more to taste

garnished with sesame seeds

Here is the normal recipe

1/4 c low sodium soy sauce
1/4 c sesame oil
2 tbs balsamic vinegar
2 tbs brown sugar
*optional 12 tbs chili oil

use this with cold spaghetti noodles, add in broccoli, red pepper, mushrooms, green onions, etc.
