Healthy Oatmeal Bites Alyssa's Copycat Recipe WW Friendly Weight Watchers Lightened Up Cookie Recipe After trying Alyssa's cookies, I wanted to do a copycat of them. I found a copycat recipe online that sounded pretty close, ingredient wise. I took that recipe, made a couple of changes to that recipe to lighten it up a bit more and boost the protein. We loved them! They are a great homemade, cheaper alternative to the store bought, popular, Alyssa's brand! Weight Watchers Points & Calories/Macros and additional nutritional information Included down below!

Ingredients:
4 Tbsp Ground flaxseed meal
4 Tbsp Water
1⁄2 cup Unsweetened applesauce
1⁄2 cup Lakanto Classic Monkfruit Sweetener With Erythritol
1 Tbsp Plain unsweetened almond milk
2 tsp Vanilla extract
1 tsp Ground cinnamon
1 tsp Baking powder
1⁄4 tsp salt
1 1⁄4 cup Oat flour
2 cups Uncooked old fashioned rolled oats
1⁄2 cup Lakanto Maple flavored syrup
2 scoopfuls Protein powder ( I used Perfect Isopure, Creamy Vanilla) , You can sub out with 1/2 cup additional oat flour
8 Tbsp Brummel & Brown Spread Made with Yogurt, melted
1⁄2 cup Ocean Spray Craisins 50% Less Sugar Dried Cranberries
First, in a small bowl, mix flax seed meal with 4 tablespoons of warm water. Let sit for at least 2 minutes to thicken up. Next, in a large bowl, add melted butter, applesauce, monkfruit sweetener, Lakanto maple syrup, almond milk, vanilla, cinnamon, baking powder, and salt and stir together. Add the thickened flax and mix in. Add the oats, oat flour, and protein powder and mix in. Fold in the dried cranberries. Refrigerate for 1530 minutes. Use a tablespoon to scoop out rounded tablespoons of batter and place onto a baking sheet lined with parchment paper. Gently press down and form the cookies into round shapes. Bake in preheated oven at 350F for 710 minutes. I got 30 cookies total.
