Today I'm restocking my fridge with all healthy veggies for 2024! I make some easy meal prep recipes for this week. I eat a mostly whole food plant based dairy free vegetarian diet.

pesto pasta primavera
olive oil or veggie broth for sauteeing
1 onion diced
1/2 8oz package crimini mushrooms sliced thin
4 small tomatoes sliced
1 tbsp italian seasoning
red pepper flakes to your taste
1 zucchini sliced
3 cups broccoli chopped
1/2 package trader joes kale pesto
1 package red lentil pasta
1/2 cup shredded cheese optional
tofu lettuce wraps (double recipe)
2 red bell peppers diced
~ 6 shiitake mushrooms diced
1 large carrot julienned
2 packages extra super firm tofu
1/4 cup coconut aminos, or more to taste
1 to 2 tbsp dark soy sauce
1 tbsp sesame oil
1 tsp mushroom umami seasoning
1 tsp garlic powder
red pepper flakes or sriracha to your taste
2 packages coleslaw mix
saute all ingredients together til veggies are soft, serve in a lettuce wrap with spicy cashew mayo on top and green onions.
