When I want the easiest of all egg recipes, I resort to this Egg Drop Curry or Poached Eggs Curry. The name is quite selfexplanatory here, you simply crack the eggs and drop the yolk and the white in the bubbling curry.

Now, let me tell you this recipe is just too close to my heart. This is the exact way my late grandmother would prepare this curry and she passed this recipe to my mom, then to me and every time we prepare this curry it is simply love.

Ingredients
Eggs 8 nos
Coconut 1 no (freshly grated)
Garlic 10 cloves
Turmeric 1/2 tsp
Cumin 1 tsp
Black pepper 4 nos
Coriander seeds 1 1/2 tbsp
Kashmiri chilies 7 nos
Tamarind 1 lime sized ball
Water as required
Oil 2 tbsp
Onions 2 medium sized finely chopped
Tomato 1 fat finely chopped
Salt to taste

This dish can be served with hot rice.
