German Chocolate Cake for Two | Small Batch

A tender 6 inch German chocolate cake topped with a gooey and delicious pecan and coconut frosting.

Ingredients:
1/2 cup all purpose flour
1/4 cup unsweetened cocoa powder
1/4 tsp baking soda
1/8 tsp salt
1/2 cup sugar
2 Tbsp canola or vegetable oil (can also use butter)
1 egg
1 tsp vanilla extract
1/4 cup of buttermilk
2 Tbsp warm water
Frosting Ingredients:
1/3 cup sugar
1/3 cup heavy whipping cream
1 egg yolk
2 Tbsp butter
pinch of salt
1/2 cup sweetened coconut flakes
1/3 cup chopped pecans
1/4 tsp vanilla

Directions:
Grease and flour a 6 inch cake pan
In a bowl, combine flour, cocoa powder, baking soda and salt.
In another bowl, combine sugar and oil. Mix until fluffy.
Into bowl of sugar and oil, add in egg and vanilla extract.
In a small bowl add buttermilk and water.
Add half of the flour mixture into the sugar and oil mixture. Stir to comine
Add in half the buttermilk and mix.
Repeat. Ending with buttermilk. Mix just until flour is all incorporated.
Pour into prepared pan and bake in a 350 degree F oven for 2430 minutes, until a toothpick comes out clean, the edges begin to pull away from the pan and the cake bounce baked when pressed with your finger.
Allow cake to cool for 510 minutes and then remove from pan and cool completely on a cooling rack.
Frosting:
While the cake is baking make the frosting.
In a medium saucepan, combine sugar, whipping cream, egg yolk, butter, pinch of salt.
Bring to a boil and stir constantly for 12 minutes until it thickens.
Add in coconut flakes and pecans and vanilla.
Let it cool before adding to the cake.
Spread over top of cooled cake.
