French Onion Rolls
500g AP Flour
3 tsp (10g) Instant Yeast
2 tsp (10g) Salt
½ tsp Malted Barley Flour
25g Sugar
300g Cold Milk
30g Cold Egg
28g (2 Tbs) Cold Butter
Caramelized onions
Gruyere Cheese

Mix on low for 5 mins
Increase the speed to medium and mix for 20 25 mins
First rise 1 1 ½ hours
Divide dough into 8 pieces
Bench rest 15 mins
Second Rise 11 ½ hours
Preheat oven to 400°F
Place a pan full of hot water in the oven
Lower the oven to 375°F and bake for 20 mins
