NOTE!!! Make sure to strain/drain excess water of the boiled eggplant thoroughly before mashing.. So it won't dilute the recipe and also won't mess with the binder so the patty retain it's shape

INGREDIENTS
450g eggplants
water for boiling
2pcs chopped onion
6cloves chopped garlic
3pcs chopped red tomatoes
300g ground pork
1/2tsp salt and ground black pepper
1/2Tbsp soy sauce
1Tbsp oyster sauce
3pcs Extra large beaten eggs seasoned with 3pinches of salt and ground black pepper
about 3/4cup breadcrumbs as binder (missing clip sorry)
chopped spring onions
oil for frying
