Hello everyone, Today I show how to cook daikon radish pickled easily and quickly. Daikon radish pickled tastes pleasantly crunchy and bursting with tart, sweet, and salty flavors. Generally, pickled daikon pairs well with any fatty meat, whether on tacos or with a charcuterie platter. This recipe is quick, easy, and will be ready to eat in just 4 days perfect for an appetizer, We've got you covered! Thanks for watching!

▶ Ingredients :
● 3.0kg, Fresh Daikon Radish
●● 100g, Coarse Sea Salt (for marinade)
● 300g, Sugar
● 1 cup, White Vinegar(5% Distilled Vinegar)
● Garlic and Chili (optional).

▶Method:
1. Peel the skin of daikon radish. Cut the top then cut the stems into 2 or 3 segments. Score each segment into strips works perfectly here.
2. Sprinkle them with the salt. Massage the salt into the daikon for a few moments. Then let them sit overnight. The salt draws liquid out of the daikon radish and helps them absorb vinegar later.
3. After overnight, drain out the liquid and let them sit for 15 minutes.
4. Transfer them to a big mixing bowl, and season with sugar and vinegar. Add the garlic and chili for more flavor. Then toss until sugar is dissolved.
5. Place the combined daikon radish into the glass jars. Pour the remaining liquid until the daikon is fully submerged.
6. Secure the lid and let them at room temperature for 2 days. After that, refrigerate for 12 hours (overnight) for "fully pickled".
7. Store in the refrigerator for up to 23 weeks. Generally, pickled daikon pairs well with any fatty meat, whether on tacos or with a charcuterie platter.
