跟小伙伴聊天发现很多人都说小时候不爱吃肘子其实一个好吃的肘子应该肉皮Q弹、肥肉不腻、瘦肉不柴而处理不到位的肘子确实会有很强的肥腻感所以这次我就借了几年前我做过的东坡肘子前半部分的调味+加上后半部分SPA级别的处理和烤制把它做成了脆皮的酥脆起泡的表皮嚼在嘴里是咔嚓咔嚓的完全没有了肥腻感内里的瘦肉入味又不柴可以毫无顾忌地享受大口吃肉的满足~

▋食材Ingredients

蹄膀一个约2kg2 kg pork knuckle

冰糖10粒10 crystal sugar

桂皮10cm10 cm Chinese cinnamon stick

八角3个3 star anises

香叶5片5 bay leaves

丁香5粒5 cloves

草果1个1 tsaoko cardamon

肉豆蔻1个1 nutmeg

芫荽籽1/2大勺1/2 tbsp coriander seeds

花椒粒1大勺1 tbsp szechuan pepper

陈皮1片a piece of tangerine peel

啤酒1罐1 can beer

生抽1大勺1 tbsp light soysauce

蚝油1大勺1 tbsp oyster sauce

盐salt

葱spring onion

姜ginger

小苏打baking soda
