★About seasonings

——Substitute for Mirin and Sake—
If you can’t find mirin or sake in your city, you can substitute them like this

For 1 tbsp mirin use either:
1 tbsp sake + 1/2 tsp sugar
or
1 tbsp white wine + 1/2 tsp sugar

For 1 tbsp sake use:
1 tbsp mirin
or
1 tbsp white wine

It won’t be exactly the same, but still works


——Substitute for bonito dash powder for vegetarians—
You can try to find plant based dash powder, like kombu dash powder or shiitake dash powder.
However it might be a bit difficult to find them
