Clear brown on the exterior with a greenish yolk, Chinese Century eggs duck eggs that have been preserved in an alkaline clay can be an acquired taste. Growing up, my family ate them served in rice porridge, and today I'm going to try my hand at making a homemade version. Wish me luck.
