Ingredients
1 1/2 cups chickpeas
1 large shallot ( finely chopped )
4 cloves of garlic (minced )
1 medium carrot (grated )
1/4 cup fresh parsley ( finely chopped )
1 tbsp tomato paste
1 tsp himalayan sea salt
1 tsp black pepper
3 to 4 tbsp olive oil
Step 1
Drain all the liquid from the chickpeas.
Step 2
Grate the carrot, finely chop the shallot, mince the garlic, and finely chop
the parsley.
Step 3
Using a food processor, add all the chickpeas,parsley,carrots,garlic, shallot,
tomato paste, pepper, and salt.
Step 4
Turn on the food processor, and pulse for about 30 seconds. Scrape the sides,
and pulse about 30 more seconds.
Step 5
Form the mixture into even patties, I usually get 6 from one batch.
Step 6
Over medium heat, add the oil to the pan. when the oil is hot, add the patties.
Cove and cook for 4 to 5 minutes, turn the patties over and cook for 4 to 5
more minutes. Serve warm with your favorite dipping sauce. I'm simply using
plain greek yogurt with a little dried dill, and paprika.
