Delicious Beef & Bean Enchiladas with Mexican Rice, these Enchiladas were so good and the Mexican rice was amazing.

ENCHILADA SAUCE

2 cans of enchilada sauce
1/2 tsp chili powder
1/2 tsp paprika
1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp onion powder

MEAT & BEAN MIXTURE:

1.5 to 2 lbs ground beef browned
1/2 to 1 tsp chili powder
1/2 to 1 tsp paprika
1/2 to 1 tsp cumin
1/2 to 1 tsp garlic powder
1/2 to 1 tsp onion powder
1 can of refried beans
1 can rotel tomatoes & chili's
1/4 cup queso

OTHER:

Flour tortillas
Shredded cheese

Add 1/2 to 1 cup of enchilada sauce to bottom of 9x13 dish
Place meat mixture in a flour tortillas, add shredded cheese roll up and place in baking pan. Top with rest of enchilada sauce and more shredded cheese. Bake at 350° for approximately 20 minutes.

MEXICAN RICE

2 Tbls oil
1 1/2 cup of rice
3 cups of water
1 packet of Knorr Mi Arroz Rojo Red
Toast rice in oil add remaining ingredients. bring to a boil reduce to simmer cover and simmer for 20 minutes.
