Ingredients
400g Pork Shoulder (or Leg, or presliced pork loin) about 8 slices, 1cm thick
Salt and pepper to taste
4 slices Cheddar Cheese (or your preferred cheese)
50g Chopped Ham
4 Sundried Tomatoes
4 balls Frozen Spinach, defrosted and marinated with 1 clove Garlic (or use fresh spinach)
1 ball Mozzarella Cheese, sliced
2 Eggs, beaten
50g Grated Parmesan Cheese (or Pecorino)
100g Dry Breadcrumbs
Olive Oil
Aluminum Foil (optional)

Instructions
Prepare the Pork: Using a meat mallet or rolling pin, pound the pork slices until they are about 1cm thick. Season them generously with salt and pepper.
Assemble the Pockets: Lay each pork slice flat. Top each one with a slice of cheddar cheese, chopped ham, a piece of sundried tomato, some spinach, and a slice of mozzarella.
Seal the Pork: Carefully place another pork slice on top to create a pocket, enclosing the filling.
Egg & Breadcrumbs: Whisk together the eggs in a bowl and add the cheese and some pepper. In a separate bowl, add the breadcrumbs. Dip each stuffed pork pocket into the egg mixture, coating it completely. Then, transfer it to the breadcrumbs, ensuring it's fully coated.
Baking Time: Preheat your oven to 200°C (400°F). Place the breaded pork pockets on a baking sheet lined with parchment paper. Drizzle them with olive oil and sprinkle with some additional grated cheese. Bake for 30 minutes.
Crispy Tip: For the first 20 minutes, cover the baking sheet with aluminum foil. This will help steam the pork and ensure it cooks through evenly. Then, remove the foil for the last 10 minutes to achieve a golden brown and crispy crust.
Extra Crisp (Optional): For an extra burst of crispness, you can place the pork pockets under the broiler for a couple of minutes at the very end.
