Crispy Garlic Potatoes Recipe

Hi Guys, today I’ll show you How to Make Crispy Garlic Potatoes. We need just four ingredients: potatoes, garlic, butter and parsley. LINK to Cast Iron Pan: http://amzn.to/2oMUHHu First, heat up a wide pan and coat the bottom with oil, I’m using vegetable oil. When the oil is hot, add 1 large or 2 medium peeled potatoes cut up into small pieces. I pat dry the potatoes with paper towels before adding them to the hot oil to prevent splatter. Basically, every piece of potato should touch the bottom of the pan so they have to be in a single layer. Don’t pile the potatoes on top of each other or they’ll steam instead of getting crispy. If you want to make a larger quantity, use two pans or fry in batches. Cook the potatoes on medium low for about 5 minutes until golden brown on one side. Turn them over and cook on the other side for 5 minutes. The potatoes cook very quickly since they’re small. Yes, you have to turn each piece over if you want them all to be evenly crispy. I find using a knife is easiest to turn them. If you’re not that picky, use a spoon and toss them around. Now the potatoes are golden brown and cooked. Take them out of the pan and place on a paper towel lined plate. After the pan cools, pour out any remaining oil and wipe the pan. Grate 2 cloves of garlic on a rasp. On low heat, add 2 tsps butter and the grated garlic. Cook just for a minute or two until the garlic starts to turn from white to slightly yellow. You don’t want it to be brown or burn. Make sure the heat is on low to prevent burning. Now the garlic is ready and has lost it’s raw taste. Add 2 tablespoons of chopped flat leaf parsley, the potatoes, salt and ground black pepper. Mix this thoroughly and turn the heat off. You hear the potatoes are crispy. Can you believe how easy that was? Everyone will definitely love these because what’s not to love? Crispy, garlicky, buttery potatoes that took less than 20 minutes to make including prep time.
