In this version of Pork Enchilada Verde, I cook the pork as Carnitas in the Instant Pot.
Then, I combine Cream Cheese, Green Chiles, and Green Chile Enchilada Sauce for creaminess.
Finally, I top with cheese and bake.
Mmmmmm, Good!
Ingredients:
35 lbs. Pork Roast/Boston Butt
1 T. Kosher Salt
2 t. Oregano
2 t. Pepper
1 t. Cumin
1 t. Coriander
2 T. Garlic
1 c. Chicken Broth
2 Jalapenos, chopped
3/4 c. Cheese, Cheddar or Monterey Jack
