We are showing how to grill up some cornish hens on the @breeofirepits Xseries using the outpost. This is a very fun way of cooking. We spatchcocked each cornish hen. We then seasoned one with Firedancer BBQ Chicken rub and Fiesta Brand lemon and herb seasoning. We ran a small fire giving us a grate temp of approximately 300 degrees. We cooked skin down for 10 minutes then flipped skin up. I let them go around 15 more minutes then put a aluminum pan over the top to get them cooking quicker. Started basting them in butter about 35 minutes in. cooked them until the breast reached 165 degrees which took 50 minutes. They were very Good!!!
