Ahoy Maties! Do ya'll like fish and chicken ala Long John Silvers? Well, here's a batter recipe for ya that tastes so much like it you'll start talking like a Pirate! So shiver me timbers and batten' them hatches and give this a try! Here's the recipe:
Fish or Chicken
3/4 Cup all purpose Flour
2 Tbsp. Cornstarch
1 tsp Salt
1/4 tsp Baking Powder
1/4 tsp Baking Soda
1/4 tsp Onion Powder
1/4 tsp Garlic Powder
1/8 tsp Paprika
3/4 cup Club Soda
Oil for Frying
Pat dry your chicken or fish cut into medium sized pieces and set aside. Mix all dry ingredients with the club soda and stir until batter is smooth and thick. Dip your chicken or fish in batter and place in heated oil, being careful not to crowd pieces in your skillet or fryer. Cook for 5 minutes or so on each side or until golden brown. Test and ensure the inside is done (chicken 165 degrees and fish around 160 degrees internal temp). Remove from oil and drain on paper towels or cooling rack. Serve hot with tartar or cocktail sauce, slaw and hushpuppies. Ya'll gonna love this!
