Chicken Planks Copy Cat Recipe Long John Silver's

(recipe below) There is one fast food that I dearly LOVE and that is Long John Silver’s Chicken Planks. I discovered these wonderful fried treasures when Long John Silver’s started franchising their restaurants in the early 70’s. This was one of my regular lunch spots as a new working girl. I worked in the old Second National Bank Building in Ashland in insurance and my bestie worked one floor above me at a legal firm as a secretary. She and I would have lunch daily during the week. We would chat on the phone to coordinate our lunch times and what we were in the mood for that day. Our selections were limited to what was offered down restaurant row as we called it. We had an hour for lunch but there were no parking garages at that time in Ashland; so street parking was the norm. After we had hiked several blocks to the closest car, hers or mine, we would jump in and off we would go as fast as we could so we could get back to work on time. The battle was finding a parking spot once we returned. Normally upon return we had to park even farther away in the residential area or if we were lucky we would eye spy a spot close to the building with a meter. Try walking in century old sidewalks in stilettos on the uneven slabs with tree roots. We did not always make it back to our desks on time! I can still visualize these days in my mind. Little did I know what life had in store for me and in a few short years I would move away from that area to the Carolinas. I don’t know why but almost every time I returned to my home in Kentucky I had to hit LJS for my dose of Chicken Planks. The locations for LJS are limited across the country; actually the first LJS was opened in Lexington, KY just a 2 hour drive from my hometown area. There is one location here in the Columbia, SC area but sadly with traffic, it is almost an hour drive from us now. Recently I had a craving and decided to check online to see if there were any recipes and lo and behold I found one. I had to try it and honestly it did not disappoint. As I prepared this copycat recipe memories of my bestie and I going to lunch flooded my mind. The result was close enough to satisfy my craving and Sean who had never had the Chicken Planks enjoyed them as well. (On the rare occasions that he did go to LJS he would of course order the fish.) Next time I prepare them, and I will, I will have and use the signature peanut oil that LJS uses in their restaurants and Sean some fish with of course the malt vinegar!

Copycat Long John Silver’s Chicken Planks Recipe
Servings: 4 Time: 1520 minutes (Start to Finish)

Ingredients:
1 lb. Chicken Tenderloins
3/4 cup Flour
2 tbsp. Cornstarch
1/4 tsp Baking Soda
1/4 tsp Baking Powder
1 tsp Salt
1 tsp Sugar
1/4 tsp Onion Powder
1/4 tsp Garlic Powder
3/4 cup Club Soda*
Oil for Deep Frying

Directions:
1. Combine dry ingredients in a bowl and mix well.
2. Add Club Soda and stir until well combined.
3. Heat oil to between 360 and 375.
4. Dip chicken in batter to coat completely.
5. Deep fry for until golden brown (about 3 minutes per side).

*Accidental Homebody Notes:
Substitute for Club Soda: Water or Beer
For truer taste of Long John Silver’s use Peanut Oil
This recipe works great for LJS Copy Cat fish too!
