TORTELLINI SOUP
Ingredients
1 pound of italian sausage , mild ground
2 Tablespoons minced garlic
1 bunch kale
1 onion
1 14oz can diced tomatoes
1 cartoon of chicken stock
1 (10oz) bag of tortellini
red pepper flakes to taste
2 teaspoon Italian seasoning
salt to taste about 1/2t
dash of pepper
1/21 cup coconut milk or heavy whipping cream
optional: Top with Parmesan cheese

Directions:
Add oil to a pot and allow it to heat up.
Stir in chopped onion and garlic. Saute for about a minute until the onions are translucent and garlic is fragrant.
Add Italian sausage to the pot. Cooked until browned and no more pink.
Add diced tomatoes, Italian seasoning, chilli flakes, salt, kale, chicken stock and 1/2 cups of coconut milk. Mix everything well. Bring to a boil.
Stir in tortellini and turn down heat to medium low. Cook until tortellini is cooked through.
Serve with grated parmesan.
ENJOY!
