Our Chocolate Pinwheel Cookies have delicious layers of vanilla and rich chocolate. These icebox cookies are so easy to make and are really pretty cookies. Chocolate pinwheel cookies are a favorite Christmas cookie at our house, they have a few extra steps but watch how simple they are to make!

These is an icebox cookie recipe and will need about 4 hours to chill so plan ahead. There's no need to preheat the oven until the cookies are ready to cook.

Chocolate Pinwheel Cookies Ingredients
3 cups all purpose flour
1/4 teaspoon kosher salt
3/4 teaspoon baking powder
16 tablespoons salted butter, softened
1 cup sugar
1 tablespoon milk
2 teaspoons vanilla extract
1 egg
2 egg yolks
1/3 cup cocoa powder

Chocolate Pinwheel Cookies Directions
In a large bowl, measure out 3 cups flour, 1/4 teaspoon of kosher salt that I’ve given a crush in my mortar and pestle so the salt will distribute a little more in the batter, 3/4 teaspoon baking powder and give these dry ingredients a whisk to combine and set it aside.

In a large bowl, add 16 tablespoons of softened butter. Use a hand or stand mixer to beat the butter for about a minute, then add a cup of sugar and beat on medium speed for about 2 minutes until light and fluffy.

Scrape the sides of the bowl, then add a tablespoon of milk, 2 teaspoons of vanilla extract, 1 egg and the two egg yolks.

Beat the mixture at medium speed to thoroughly combine, then use a spatula to scrape the bowl, and beat again.

Add the flour mixture a third at a time, beating on medium speed and stopping to scrape the sides in between.

When the flour is all incorporated, gather the dough in the bowl and place half on a piece of parchment paper. Fold half of the parchment over the dough, and using your hands and or a rolling pin, gently spread it evenly under the paper into a rectangle about 16 18 inches long.

This is a soft, buttery dough. If you have areas that need a bit more, add extra bits from the edges and use your hands or rolling pin to smooth into place. You can also mix in another flavor that goes well with chocolate, like peppermint for chocolate peppermint, or orange… what do you think? Add it to comments! Once the dough is set, put it into the refrigerator to chill.

Next to make the chocolate layer of the pinwheel with the remaining dough. Take the cocoa powder, and add ⅓ cup to the mixture. Use a spoon or spatula to thoroughly mix the cocoa into the dough. Then place the dough on another sheet of parchment paper, and spread the chocolate dough into a similarly sized rectangle and put it into the refrigerator to chill with the first.

Once both doughs have chilled for at least 2 hours, peel back half of the parchment from the chocolate dough. Peel back the parchment from the vanilla dough, and lay it side by side with the chocolate dough. Quickly flip the vanilla dough on top of the chocolate dough. My dough got a little warm and cracked in a few places, but no worries it’s easy to fix up.

Do your best to line up the dough, then cover with parchment and give it a press with the rolling pin. Trim up the edges and sides, and then begin rolling the dough, using the parchment to help. I’m rolling on the long side, which gives nice big sections of vanilla and chocolate. For a tighter swirl, roll from the short end. Wrap the roll in parchment and chill for another 2 hours.

Begin preheating the oven to 350 degrees. Unwrap the pinwheel log, and slice the end off to get a clean slice. Then slice into 1 inch pieces. Place the pinwheel slices on a parchment lined baking sheet about 2 inches apart. Bake in the preheated oven for 12 minutes, until just starting to turn golden then let cool on a wire rack.
