4 portions (6 oz) thin fresh egg noodles (or dehydrated)

Broth:
1 lb chicken wings and bones
1 onion
2 slices of ginger
3 garlic cloves
1 tsp small dried shrimp
2 tbsp light soy sauce
2 tbsp fish sauce
1 tbsp salt
10 cups water (2.5 liters)
Wonton dumplings (approximately 30 pieces):
2 chicken thighs
½ lb frozen raw shrimp
1 garlic clove
¼ tsp grated ginger
¼ tsp salt
¼ tsp ground pepper
1 tbsp fish sauce
1 tbsp oyster sauce
1 tbsp light soy sauce
1 tbsp Shaoxing cooking wine
1 tbsp sesame oil
1 tsp cornstarch
4 spring onions
30 wonton wrapers
Aromatic seasoning:
5 garlic cloves
4 shallots
2 bay leaves
2 star anise
1 cinnamon stick
1 tsp grated ginger
½ cup vegetable oil
