Chicken Noodle Soup is often considered a comfort food.
It comforts the sick, the soul, and those of us who just miss Summer!

Ingredients:
2 T. Oil
3 lbs. Chicken, (I suggest using dark meat or a combination)
1 Large Onion, chopped
34 Carrots, chopped
3 Celery Stalks, chopped (or 1 cup)
2 T. Garlic, minced
8 c. Water
2 T. Chicken Bouillon Powder or 6 cubes
1/2 t. Onion Powder
1/2 t. Garlic Powder
1 t. Salt
1/2 t. Pepper
1 t. Parsley
1 t. Thyme Leaves
2 Bay Leaves
812 oz. Egg Noodles

NOTE: If making stock only, you can chop ingredients coarsely for easier removal.
