黑椒薯仔牛柳粒

材料
急凍牛肉粒1磅
薯仔大1個
洋蔥1個
紅椒1個
薑幾片
蒜頭幾粒

調味料
黑椒粒2湯匙

處理
1. 牛肉粒清水解凍。
2. 薯仔洗淨刨皮切細粒浸水30分鐘釋出多餘澱粉質。
3. 撈起牛肉粒切細粒方便容易炒。
4. 加入1茶匙粗鹽在牛肉粒中乸10分鐘以去除雪味及羶味。
5. 過了10分鐘沖洗乾淨擎乾水用廚紙索乾。
6. 牛肉調味
a. 生粉1茶匙
b. 鮑魚汁1茶匙
c. 生抽1茶匙
d. 油1茶匙
撈勻醃10分鐘。
7. 薯仔清水沖乾淨擎乾水。
8. 薑切片
蒜頭去皮
洋蔥1開8
紅椒切細塊
黑椒粒2湯匙。

烹調
1. 用中火在鑊中燒熱300毫升油。
2. 放薯粒及蒜頭。
3. 薯仔及蒜頭炸至金黃色撈起。
4. 開大火再炸薯仔大約20秒撈起。
5. 放所有配料落鑊炸一炸1分鐘後撈起。
6. 放1湯匙油在鑊中燒熱加入牛肉粒大火煎一煎反一反。
7. 加入薯仔及所有配料再加入調味料
a. 鮑魚汁1茶匙
b. 生抽1茶匙
c. 糖1茶匙
炒勻。
8. 加入黑椒粒炒勻熄火上碟。

Beef cubes and potatoes with black pepper:

Ingredients:
Frozen beef cubes 1 lb
Potato (large) 1 No.
Onion 1 No.
Bell pepper (red) 1 No.
Ginger several slices
Garlics several cubes

Seasoning:
Black pepper 2 tbsp

Preparation:
1. Defrost beef cubes with tap water.
2. Potatoes, rinse, peel, cut into small cubes. Soak in tap water for 30 minutes to release excess starch.
3. Pick up beef cubes, cut into to small cubes in order to help frying easily.
4. Put 1 tsp cooking salt into beef for 10 minutes in order to remove unpleasant smells and tastes.
5. Rinse thoroughly after 10 minutes, hang dry and dry with kitchen towel.
6. Season the beef:
a. Tapioca starch 1 tsp
b. Abalone sauce 1 tsp
c. Light soya sauce 1 tsp
d. Oil 1 tsp
Mix well. Season for 10 minutes.
7. Potatoes, rinse with tap water. Hang dry.
8. Ginger, get it sliced.
Garlics, get it peeled.
Onion, 1 onion is to be divided into 8 shares.
Bell pepper, cut into small pieces.
Black pepper, 2 tbsp

Steps:
1. Heat up 300ml oil at medium flame in wok.
2. Put potatoes and garlics into wok.
3. Pick up potatoes and garlics until the colour has been fried into golden.
4. Turn to high flame, fry potatoes for 20 seconds. Pick them up.
5. Put all the ingredients into the wok, fry for 1 minute, then pick them up.
6. Heat up 1 tbsp oil at high flame in wok. Put beef, fry for a minute. Then flip them over.
7. Put potatoes, all the ingredients, and:
a. Abalone sauce tsp
b. Light soya sauce 1 tsp
c. Sugar 1 tsp
Fry well.
8. Put black pepper, fry well. Turn off fire. Serve.
