COLD NOODLE BOWL | 2 servings
For the tofu:
200g firm tofu
1 1/2 tbsp tamari sauce
1 tbsp rice vinegar
1/2 tsp garlic powder

For the dressing:
2 tbsp peanut butter
1 tbsp rice vinegar
1 tbsp tamari sauce
1/2 tbsp maple syrup
Water to thin

For the bowl:
125g soba noodles, dry
Red cabbage
Cucumber
Carrots
Coriander
Lime

TEMPEH PANZANELLA | 2 servings
For the tempeh:
200g tempeh
1 1/5 tbsp tamari sauce

For the croutons:
2 slices of bread
1/2 tsp garlic powder
1 tsp dried oregano
1/8 tsp salt
Optionally some oil

For the dressing:
1 tbsp water
1/2 tbsp olive oil
1 tsp dijon mustard
1 tsp balsamic vinegar
1 tsp lemon juice
1/2 tsp maple syrup
1/4 tsp salt

For the bowl:
4 tomatoes
1/4 red onion
1/2 cucumber
2 tbsp fresh basil

BABA GANOUSH BOWL | 2 servings
For the baba:
2 big aubergines
4 tbsp tahini/tahina
1 tbsp lemon juice
1/2 garlic clove

Roasted veggies:
115g chickpeas, drained
150g sweet potato
1/2 tsp cumin, ground
1/2 tsp dried oregano
1/4 tsp salt
1/4 tsp smoked paprika powder
1/4 tsp cinnamon, ground

For the bowl:
1/4 cup quinoa, dry
Red cabbage
Cucumber
Olives
Arugula
