1 kg pork (pork belly).

Bring the water to a boil and place the pork belly strips in a saucepan.

Cut pork belly strips into small portions.
4 cloves of garlic.
Finely chop the garlic.
A little spring onion.
Cut the onion into small feathers.
Pour a little vegetable oil in a frying pan over low heat.
2 tablespoons brown sugar.
Melt the sugar over low heat, stirring constantly, and let it caramelize.
Once the sugar has melted, add the pieces of meat to the pan.
Sear the meat for 10 minutes, stirring constantly, until the meat is coated in caramel and lightly browned.
Add a few sprigs of thyme and chili.
Add the chopped garlic and onion to the meat in the pan.
Pour in enough water to cover the meat.
Pour in 5 tablespoons of soy sauce.
Cook the pork over low heat for 2530 minutes until fully cooked. During this time, the sauce will thicken and the meat will be tender and rosy.
2 bunches of arugula (or green salad of your choice).
7 small tomatoes.
Roughly chop the tomatoes.
1 head red onion.
Cut the onion in half rings.
Cut 1 green chilli into rings or sticks.
23 pinches of salt.
1/2 teaspoon brown sugar.
3 teaspoons balsamic sauce (or you can use balsamic vinegar).
Mix well.
Dress the salad with the prepared dressing.
Mix well.
Delicious Chinese salad is ready to serve.
