I hope you are all doing well. Welcome back to my channel and to another cooking video. Thank you all for your feedback on my last video, I am going to make these a regular thing on my channel again.

POTATO & CAULIFLOWER CURRY Serves 4
1 cauliflower cut into florettes
1tbsp olive oil
1tsp ground cumin, curry powder, turmeric and garam masala.

800g potatoes, peeled
2 cloves of garlic, grated
150g frozen peas
1 onion, 1/2 sliced & 1/2 diced
2 tablespoons olive oil
2 tablespoons unsalted butter
1tsp turmeric
1tsp ground cumin
1tsp curry powder
200g spinach, washed
250ml water to make sauce (use more or less to get desired consistancy)

double cream, chilli oil and popadoms to serve
1/2 lemon to taste
salt and pepper to taste

LEEK AND MUSHROOM PIE Serves 2
1 leek, washed, trimmed and sliced
1 pack of chestnut or button mushrooms, sliced
2 cloves of garlic, grated
1tbsp olive oil
1tsp wholegrain mustard
1/2 vegetable stock cube
1 pack of prerolled shortcrust pastry
100g frozen peas
150g washed spinach
1tsp grated nutmeg
salt and pepper to taste
250ml double cream
milk to glaze pastry
mashed potato and broccoli to serve

STICKY MUSHROOM BURGERS Serves 2
2 Portobello Mushrooms, sliced
1 white onion, sliced
4 pieces of garlic ciabatta
1 garlic clove, grated
2tbsp olive oil
2tbsp balsamic vinegar
1tsp caster sugar
1/2tsp salt
side salad to serve (cucumber, lettuce & tomatoes)
60g cheddar cheese, grated

3 medium potatoes, cut into wedges

MOLTEN CHOCOLATE FONDANT Serves 4

2tsp cocoa powder, to dust
50g goodquality dark, bitter chocolate (minimum 70% cocoa solids), in pieces
1 large egg
1 large egg yolk
60g caster sugar
2tbsp orange juice or cointrea
50g plain flour, sifted
Crème fraîche or vanilla ice cream, to serve

Cooking temperature: Heat the oven to 160°C/325°F/gas mark 3.
Cooking time: 1214 minutes
Ramekin size: 7.5cm moulds
