Dhallpuri making is a long and tedious process for a homecook. The system (using grocery store styrofoam trays) I devised years ago for a solo DPuri cooking session was a game changer. With one extra pair of hands, the process becomes even more manageable and less stressful. Get the ball rolling, by getting 46 (or more) pancakes (depending on your ability to roll out the pancake) ready for cooking on the production line, before the griddle/pan is ready for the first dhallpuri to cook. Cover the raw dhallpuri, before and after rolling out, if they dry out.

I tried making Roti Canai in my kitchen, but failed miserably after both attempts. Couldn't be that generous with the quantity of oil needed, and therefore couldn't get an easily stretchable roti pancake before the folding process. The hand & arm coordination is super important to get it right too!

Fried snacks is comfort street food reminiscent of hot weather in tropical parts of the world, bringing back memories of preCovid carefree travelling days when we had our annual Winter Escape. We upped the game of frying vegetables outdoors when weather permits by adding aromatics in the batter : spices, chopped onion and green onion/chives/coriander we have harvested from the garden. Battered peppers, squashes, unripe hard green tomatoes (sliced) make good fritters.

Winter is upon us, we embrace the seasonality to which we are inextricably bound in Canada. As a backyard gardener with a short growing season, we need to pay extra attention to weather forecast and be mindful of strategies that allow us to maximize crop production, from the timing of starting our seedlings indoors when there is ice and snow outside, to the last crop to be harvested.
