3 Extreme Grocery Budget Challenge Meals Using Canned Chicken - Dollar Tree and Walmart Friendly

Today, I'm making 3 budget meals using canned chicken.

Walmart Grocery List $2.34 a plate
Walmart Price = $14.04
3 Cans of chicken $3.36
Green pepper $0.68
Onion $0.66
Bbq sauce $1.12
1 mango (or bag of frozen mango) $0.98
1 can coconut milk $1.74
4 oz pack Garlic mashed potatoes $0.62
1 Can corn or frozen corn $0.54
Flour $1.00
Yeast $0.86
Bread Crumbs $0.92
6 count Eggs $1.56

Dollar Tree Grocery List $2.46 a plate
Total Price = $14.75
3 Cans of chicken $3.75
Pepper onion mix $1.25
Bbq sauce $1.25
1 pack of mango snack cups $1.25
1 can coconut milk $1.25
4 oz pack Garlic mashed potatoes $1.25
1 Can corn or frozen corn $1.00
Flour $1.00
Yeast $1.25
Bread crumbs $1.25
Eggs $1.25

BBQ Buns:

1 drained 5oz can of chicken
1/4 cup preferred BBQ sauce
A pinch of red pepper flakes if desired
1/2 tsp garlic powder
1/2 tsp onion powder

Mix and marinade ingredients covered overnight. The next day, add 1/4 cup chopped onion, 1/4 cup chopped green pepper, and BBQ chicken mixture to a small pot and heat until the onions start softening.

Buns (Basic Bread Recipe)
1 cup warm water
2 and 1/2 tsp yeast
1 Tbs sugar (optional)
3 cups flour
1/4 cup Oil
1 tsp salt

Preheat oven to 350 degrees Fahrenheit. Combine and knead ingredients until a smooth dough forms. Divide dough into 3 potions 1 for each recipe. Take 1 portion of the dough and divide into 4 balls (or more if smaller buns are desired) and flatten each ball to about 1/2 inch thick. Place 2 Tbs of BBQ chicken mixture in the center of each bun and wrap the edges around pinching to seal. Place each bun seem side down on a parchment lined 9×13 baking sheet and let rise for 15 minutes. Then stick in preheated oven to par bake for 30 minutes or until dough springs back when you press it should be golden brown in color.

Coconut Thai Curry and Naan:
1 can coconut milk
1 can chicken drained
1 Tbs curry powder
1 tsp ginger powder
1 tsp turmeric powder
2 tsp soy sauce

1 tsp lemon juice (or vinegar)
1 chopped mango
1/4 cup pepper chopped
1/4 cup onion chopped
Pinch of red pepper flakes if desired

Combine first 6 ingradients and marinade covered overnight. The next day, add the bowl of marinaded chicken to a pot and the remaining ingredients. Heat thoroughly.

Naan:
Flatten small 1 inch balls of dough from the basic bread recipe. Heat a skillet, then add the flattened pieces to your ungreased skillet. Flip every 30 seconds until each side is lightly browned, then stack on a plate and place a paper towel over to steam until all the naan are cooked. Butter each naan and serve.
