Yes you can create a healthy, balanced meal for date night, meal prep, or your family for under $20!! I only brought $20 to the grocery store to buy all the ingredients needed and was able to include protein, carbs, healthy fats, and so many vitamins & minerals into one meal!
I could have easily just bought something simple like pasta and tomato sauce, but I didn’t want to sacrifice nutrients or quality. I was able to make a sticky rice noodle stir fry with peanut sauce for $19 AND in under 20 minutes!!
What I bought:
Pad Thai rice noodles $4.24
Soy sauce $3.99
Peanut butter $2.49
Veggie mix $3.99
Extra firm tofu $1.69
Mushrooms $2.59
What I had at home to use:
Ketchup
Lime
Agave
Sesame oil
Spices
INGREDIENTS:
1 pack of rice noodles
1 pack of tofu
2 cups mixed veggies
1 cup mushrooms
1 tbsp sesame oil
Sauce:
⅓ cup peanut butter
¼ cup soy sauce
1 tsp chili flakes
Juice of 1 lime
½ tbs agave
METHOD:
Boil water & cook the rice noodles according to package
Mix sauce ingredients together in a jar
Saute veggies & mushrooms in oil & any spices you want
Cube your tofu & cook for 34 minutes each side
Once crispy, add a little bit of soy sauce on top of tofu
Combine noodles, veg, & tofu into pan & pour over sauce
Say a prayer of gratitude, serve with love, & eat with joy!
