食材如下 ingredients
A.蛋黃糊
沙拉油 60g vegetable oil
低筋粉 100g cake flour
可可粉 20g cocoa powder
鮮奶 80g milk
蛋黃 6顆 egg yolks
鹽 1g salt
B.蛋白霜
蛋白(冰) 6顆 egg whites
細砂糖 100g white sugar
8吋固定模(或烤2顆8吋或2顆6吋烤溫烤時都適同) 8" round cake pan
下層水浴法 Water Bath
上火160/下火120°C烤65分(先烤熟)
280°F bake 65 mins (cake bake done)
上火180/下火120°C烤15分(再上色剩5分時改乾烤)
300°F bake 15 mins (surface gets brown and 5 mins remaining to use normal bake)
