Ingredients
All purpose flour 500 g (3 cups + 1/2 cup)
Baking powder 8 g (2 tsp)
Baking soda 3 g (1/2 tsp)
Salt 5 6 g (1 tsp)
Vegetable oil 30 ml (2 tbsp)
Cold water 310320 ml

Oil temperature 170 ° C (360° F) 185° C (390 ° F)

Important tips
1. The water must be cold water as the baking powder will react when it meets hot water.
2. After 10 minutes resting, knead and fold the dough to get a smooth surface. Shape the dough then rest at room temperature for 4 hours or keep it in the refrigerator overnight.
3. Make sure do not sprinkle flour on the mat otherwise the oil will become murky and mess. If the dough sticky you can sprinkle a little bit of oil on the mat to prevent sticking, roll it into a long strip and cut it into strips about 3 4 cm wide.
4. Dip chopsticks in water and draw a line in the middle to make the middle stick together well.
